Yes - I've never been able to understand how Pagans can say that
(e.g.) May 1st is Beltane when it's only the last few centuries that
the current calendar has been in existance. Equinoxes and Soltices are
at dates fixed by other than the Julian calendar but I don't know how
other dates were fixed other than by astrological measurements and
calculations re moon phase in relation to equinox/solstice.
(being eclectic I don't "do" ritual).

I once fed cattle for an old neighbour, who aimed for stopping feeding
on `old may day' (14th May).. several years we missed the target, as
there wouldn't be enough grass.. Hey, I just thought, if Old May day
was 14th in, what, 175?, it would now be later!.. Anyway, whenever
anyone waffles on about how good farming was in the old days, I
reember that old guys farm, 200+acres, with about 110 cattle wandering
around. (he bought in all his feed, twas cheaper than hiring people to
make it).. Another guy, used buy cattle in Spring, sell in autumn
(land was good but heavy), 159 acres, 98 cattle, now that farm is
about 60 acres, the rest divided into 9 pieces. A lot of grass being
lawnmowed and dumped.

Dead simple :-)

Make an ordinary pancake batter and leave it to stand.
(Or, for extra lightness: Separate the eggs, make the batter with the yolks
and let that stand then just before using beat the whites stiff and fold
in.)

While the gluten in the flour is relaxing nip out to chosen elderflower tree
and pick three or four heads per person - ones just out, still with all
their pollen and as few beetles as possible are preferred.

Clean out any obvious rubbish but don't wash the heads. Holding by the stalk
swish them in the batter and pick out a full 'brush' load, drop directly
into melted butter in hot pan. At once use kitchen scissors to cut away
the stalks as close to the fritter as possible and throw away the stalks.
Flip the fritter and fry other side.

Serve with sugar and cream.

Not here, and we're within stone's throw of the south coast. I can see
both Southampton and Portsmouth from the top of the nearest hill.

You must be about 60 miles east of me - funny how tyings change over so
short a distance.

Not only that but there seems to be a lot of local variation, around
here between the clay over chalk and the coastal sandlings, but even
between areas otherwise seemingly similar: some places the hawthorn is
