It is starting to look interesting.Beef is actually moving up again,
consumption and demand are good in the UK and cost of feed hasn't been a
problem this winter (but next winter is another kettle of fish).

I recently added it back into my menu, forgot how nice it tastes when
properly raised - and surprisingly cheaper than lamb.

I've always preferred beef, my favourate meat.

I've reached the age I no longer have favourites, one day it's beef,
another day lamb, we've just polished off a (frozen) bunny and there's
a (frozen) pheasant in the fridge along with various fish, they're
*all* favourites . . .

(we have a pheasant in the garden, I'm leaving a casserole out on the
patio to get him used to the idea)

<snip>

whether this includes imported biofuels I somewhat doubt

Oh they can grow it in the Ukraine and pipe it through the same pipes
we get our gas

that'll help

Not only that but as Ukraine is one of these areas where grain yields can
vary by 50% either way depending on the year, so some years they can supply
us biofuel, other years we can send them food aid.

<G> probably even now accountants are working on the most profitable
way to do just that and reclaim VAT in both directions

had Lamb Henry last night at a local pub and that was really excellent. Mind
you because we do our own beef I'm always wary of eating beef out because it
often isn't as good as ours but having tasted the lamb, I'd be tempted by
the beef next time

doubtless if you get the right paperwork from your mate in the right EU
office all is possible

I thought that perhaps they had used a certain vacuum cleaner to
mechanically recover the meat. :-)

A lady was telling me a while ago, former cook (as was my wife), about
lamb shanks.. lots of preperation, little result.. Better to get out
than cook at home.

the connection did occur to me as well, but with good lamb it is excellent
(if the lamb is a bit fatty then it can be greasy)

She could well be right. I wonder if it is one of these things that actually
long slow cooking on an almost industrial scale can so it better than in the
home?
Roast beef sliced of a really big joint can be better than from the same
joint cut up and roasted in small bits

A few weeks ago our building work got to the point where we had no
water, electricity and the builder wanted to take the roof off. Our
neighbour Giovanni on the next farm south offered us the use of his
fieldworker's house - it's only used during harvest. For an entire week
we were not permitted to cook, clean or even exert ourselves. It
reminded me of back in the 50's here, or rather in the Peak District,
where my family used to have a hill farm and the neighbours all used to
look after each other the same way.

Anyway... the food was stunning. Eleanor, Giovanni's wife is a
cordon-bleu class cook and she makes wonderful meals from simple
ingredients. Almost everything on the plate they grow and make
themselves. One night they were asking about food and England and I said
that supermarkets had almost killed off cooking skills and mentioned
that whereas mutton was the main meat we had when I was a child, it's
now unobtainable.

Two days later she made mutton shank for me. Marinaded in their own wine
with fresh rosemary for 24h then casseroled for 12hours with their own
Ascolana olives. It was perfect, grease skimmed as it cooked and the
wine transformed into a gold-brown sauce. Simply delicious, and so much
more flavour than lamb.

Does the grease clog up the cleaner, then? ;-)

Having nothing to do yesterday evening, and with a cold wind blowing,
I went to Tesco, wandered along the aisles (amazingly, nobody gave me a
dollar for a cup of coffee), and thought of how good food has gone out
of fashion, even yer old potato is reconstituted as crisps.. 80% of
the food items are rubbish.. and that's before you get to the spurious
health claims. Spell worked however, people started to ring up to see
me.
